Carrot Cake with Cream Cheese Icing
INGREDIENTS
¾ cup olive oil
1½ cups caster sugar
3 eggs
2 cups plain flour
3 tsp cinnamon
2 tsp bicarb soda
2½ tsp vanilla essence
1 tsp salt
2 cups of grated carrot
1 cup chopped walnuts
¾ cup drained, crushed pineapple
METHOD
Mix all ingredients together well
Cook at 150℃ to 180℃ for about 45 minutes
Cream Cheese icing
INGREDIENTS
110g Philadelphia cream cheese
1 cup of sifted icing sugar
60g butter
METHOD
Make sure the cream cheese and butter is at room temperature, then mix all of the ingredients together until smooth.
