‘Pearfect’ baked dessert

Every fortnight, The Teller Collective owner Aline Davies will share some of her favourite recipes for readers wanting to try a little restaurant magic at home.

A warm, lightly sweet baked dessert, Clafoutis is simple to make and perfect for serving with ice cream. This version uses thinly sliced pears and a sprinkle of raw sugar to create a delicate crust. Serve it straight from the oven with maple syrup and vanilla ice cream for a comforting treat.

Pear Clafoutis with vanilla ice cream

Dry ingredients

175g plain flour

175g caster sugar

7g baking powder

5g flake salt

Wet ingredients

125g sour cream

50ml milk

60ml vegetable oil

1 egg

Add-ins

50g thinly sliced pears

20g raw sugar

To serve

Blueberries

Maple syrup

Vanilla ice cream

Method

Preheat the oven to 185°C.

In a bowl, combine the flour, caster sugar, baking powder and salt.

In another bowl, whisk together the sour cream, milk, vegetable oil and eggs until smooth.

Add the dry ingredients to the wet mixture and stir until well combined.

Lightly grease an 8cm ovenproof or cast-iron pan with spray oil.

Pour about 150g of batter into the pan and scatter sliced pears on top.

Sprinkle raw sugar over the batter for a crisp, caramelised crust.

Bake for about 12 minutes, or until lightly golden and set.

Serve warm with maple syrup, berries and vanilla ice cream.
