A man accused of pointing a fake gun at a police officer and members of the public during a carjacking spree has been denied bail.

Simon Michael Davies, 48, appeared before the Melbourne Magistrates Court on Wednesday via video link from the Royal Melbourne Hospital.

He has been charged with 12 offences including possessing an imitation firearm, which he allegedly used in multiple carjackings, attempted aggravated burglary, assault and threats to kill during an alleged crime spree over multiple days.

He is accused of assaulting a man at a BP convenience store, and trying to steal a Honda Civic before carjacking a Mitsubishi SUV, while presenting a small black firearm.

Shortly after gaining access to the Mitsubishi SUV, Detective Sergeant Jeremy Hart told the court Davies allegedly told the victim: "I'm sorry, I'll buy you a Lamborghini."

After another alleged carjacking, he was followed to Melbourne's city centre where he allegedly pointed his fake gun at a police officer and members of the community.

He was arrested inside a staff elevator in a hotel.

Davies interjected during the hearing, telling the court he had suffered a "hard upbringing".

"I'm a very kind and compassionate and religious man," he told the magistrate.

"I would never in my lifetime harm any woman or child under any circumstances."

Davies broke down in tears multiple times on a hospital bed during the hearing, as his alleged offending was read to the court.

Defence lawyer Felix Best told the court the accused had suffered multiple injuries during the arrest, including a broken arm.

Mr Best said his client presented with a special vulnerability in custody due to his mental ill health.

The court heard Davies had declining mental health issues, was off his medication, living with schizophrenia, was bipolar, and was using drugs.

Magistrate Donna Bakos denied the bail application late on Wednesday, saying the applicant did not meet the test of exceptional circumstances.

"This is conduct that created real terror in the community," the magistrate added.

Davies will appear back in court in February.
