Bean Burrito Bowl

As the world gets increasingly expensive, sometimes we need to rethink our meals and how we can make what we eat more cost-effective.

Eating vegetarian meals is a great way to keep costs down and provide a delicious meal.

This Bean Burrito Bowl is not only very cost-effective but also tastes great and has an excellent source of protein. Perfect for that midweek meal or prepping for the week ahead.

Ingredients:

1 can kidney beans

1 can black beans

1 cup corn (canned, fresh or frozen)

1 small onion, diced

1 small capsicum, diced

1 packet taco seasoning

1 cup cooked rice

Toppings: (optional)

Cheese (grated), tomato, onion, avocado, salsa, Greek yoghurt or sour cream, lime, corn chips.

Method:

Heat a tablespoon of oil in a large pan and add the diced onions and capsicum, cooking until they start to soften.

Add the kidney beans, black beans, corn and taco seasoning and cook until heated.

While the beans cook, prepare your rice and toppings of choice.

Serve a portion of rice, beans and toppings in a bowl.

Serves two to four people, depending on portion sizes.
